90 gr Gorgonzola Dolce
140 gr cream 36%
30 gr milk
15 gr CustC
 
1. Put all ingredients together in acontainer and heat them up to 70ºC (160ºF). Blend them profusely until a smooth cream is obtained.
2. Add CustC and blend to integrate. Let it rest for 5 minutes and process  it again to obtain a thick cream (pastry texture), smooth, and shiny.
3. Keep it in the refrigerator until set. Place it in a piping bag and use as desired.
