Boil the milk with the elderflowers, starting from cold. 2. When it has boiled, take it off the heat, put a lid on it, and let it infuse for an hour. 3. Strain it through a fine sieve, pressing with intensity to extract as much of the aroma as possible. 4. Mix it with the cream, the salt and, the sugar. 5. Add the Giota and blend it with the rest of the ingredients. 6. Bring it to a boil and dose it. 7. Let it set in the cooler.
