1 Kg Granny Smith apple
 c/s Asac
330 gr Granny apple liquid (previous elaboration)
0,5 gr Asac
90 gr lemon juice
0,6 gr Xtan
70 gr TPT simple syrup
1. Cut the apple and take out its core while constantly putting it in an Asac bath.

2. Liquify it with the Omega Juicer and weigh 330 gr for the recipe.

3. Mix it with the other ingredients with strong agitation for 2 minutes; remove all the incorporated air with a vacuum machine.

4. Put it into a siphon and charge it with two carbonic capsules.

5. Keep it cold until your service.
