It comes in a powder form, of a sweet and slightly balsamic taste.
Applications
Widely used in drinks, chewing gum and candies that do not contain sugar for its refreshing and antibacterial properties.
Xyl does not caramelize, absorbs more moisture than sugar and can also be used in fermented doughs.
It has a tendency to crystallize in cold viscous mixtures (jams, pastes, creams,…) so it is usually used in synergy with Xtan (therefore we recommend adding a small part of Xtan to Xylitol before integrating into the recipe).
To use as a substitute for brown sugar, replace a small part of the Xyl with molasses or muscovado to have the characteristic color and aroma of it.

It is found in nature in the fibers of vegetables, cereals, and mostly in fruits such as strawberries, blueberries and raspberries. It is toxic to dogs.
The closer the percentage of solids of polyols to 100, the easier it will be to use it as a substitute to sucrose without further changes.
