TARTARIC ACID

Trac is a natural ingredient that is obtained as a winemaking by-product (a natural residue of the fermenting process). In oenology it is essential as an acidifier for wines.

It has emulsifying and leavening functions (in cakes, doughs and baking), raising agents (in beverages), preservatives (in pickles, preserves and fruits), antioxidants (in fruits and vegetables), and is usually applied as an acidulant to balance the sugar of a recipe.

In wine and must production, it is used as an acidifier. In musts and wines it is indispensable in order to produce more balanced wines from the taste point of view, increasing the acidity of titration and decreasing the PH of the same.

Apply Trac by mixing directly into a cold liquid and stir.

It is easy to dissolve in water and it is very useful when added to look for a pH of 4.6 to avoid the action of bacteria.

Tartaric acid is a component of the baking powder, due to its ability to increase the volume in the mass while it’s cooking. It is one of the main acids perceived by humans, along with malic acid and citric acid; therefore, it is an excellent regulator of acidity.
