Easy to dose and apply in any liquid base. It can act without problems in mixtures of all types (even in the presence of grease and alcohol).
Compared to Skro, it is very similar in terms of stability and aerating capacity, but with better performance in certain media (grease and alcohol) and greater resistance to temperature (stable over a wide range of temperatures and temperature changes).
It comes in powder form, with a neutral flavor.
Applications
Creation of airs and foams with many capacities (works well in alcoholic bases, with fats up to 50%, cold and hot). It works well in a wide pH range (from 2,5 to 8) and is stable against acidity and salts.
Very practical in industrial productions for the dispersion of solids (improves the solubility of powders such as coffee and chocolate).
It works very well in synergy with Xtan (at 0,2% xanthan), for stabilization of the result.
An interesting use is in the production of slush, as adding Qfm and creating foam improves the structure of the ice and its refreshing capacity.
At a dose range of 2 – 10 gr / L, it acts in fat-in-water emulsions (without aerating capacities); at 30 gr / L, it creates and stabilizes airs; at 40 gr / L it is capable of aerating and stabilizing espumas (foams).
Curiosities
Saponins – so called because of their structure and behavior similar to the soap – are molecules consisting of a fat-soluble element (steroid or triterpenoid, soluble in fats) and a water-soluble element (sugar, soluble in water) which, when mixed with water, produce foam with agitation.
