OBLATE POWDER

ObltP is an Oblate powder: a transparent wafer made with potato starch, lecithin and refined canola vegetable oil. It looks like a thin sheet with a completely neutral flavor, it is natural and has infinite possibilities. Within our Oblate family, ObltP is ideal for mixing with fruit purees and preparing crunchy elaborations with countless shapes or textures for later dehydration.

ObltP dissolves instantly in any liquid. Sugar can be mixed in for sweet preparations (providing greater hardness in its texture); or fibers, bulking agents or freeze-dried powder for savory recipes.

ObltP is the most innovative format of Oblate, and with it, we achieve total freedom to elaborate what you want: any size, texture, shape, molding, or type is possible.

The Oblate family has 7 different formats suitable for each preparation: thin and translucent sheets, roll, sheets, squares, cones, discs and now in fine powder.

Features

Totally neutral in taste and smell. In contact with water it hydrates and melts, although with fats it does not melt or soften. When mixed with sugar or caramel powder, it resists the moderate heat of the oven up to 190ºC (374ºF). Great durability and conservation if kept away from direct sunlight and humid places. For its conservation, it is recommended to keep it in airtight containers and rely on the use of dryers (Calc). The texture of the ObltP is unique, giving an incredibly aerial and light result.

Applications

Preparation of savory and sweet crunchy rolls, ravioli, crunchy base, invisible millefeuille, dumplings, etc. It is of special interest to complement this technique with our range of LyoP (freeze-dried powdered ingredients), for a perfect contribution of color and flavor.
