OBLATE SQUARE

ObltS are square bases of 70 mm side of Oblat: a very thin sheet made with potato starch, lecithin and refined canola vegetable oil; without any contribution of flavor and aroma to a recipe, natural and with infinite possibilities.

Within our Oblat family, ObltS has been designed to make its use extremely simple and practical. Quickly prepare small savory or sweet bites with countless ingredients for being later dehydrated, covered with flavored sugar or caramel powder, dry powder, seeds, flavored with alcohol, honey, fats, etc.

The Oblat family has 7 different formats which are suitable for different preparations:

thin and translucent sheets, powder, sheet, roll, cones, discs and also in square sheets for immediate use.

Features

Totally neutral in taste and smell. In contact with water it hydrates and melts, although with fats it does not react or soften. When used with sugar or caramel powder, it resists the moderate heat of the oven up to 190ºC (374ºF). Therefore, it is very common to cover it with caramel and cook in the oven or dry it in a dehydrator at 50ºC (122ºF). ObltS sticks to itself with oil or with a sealing machine. Great durability and conservation if kept away from direct sunlight and humid places. For its conservation, it is recommended to keep it in airtight containers and rely on the use of dryers (Calc). The texture of the ObltS is unique, giving an incredibly aerial and light result.

Applications

Preparation of crunchy salty and sweet, canap,petit fours, small bites, finishing touches, etc. The square format of ObltS is one of the most common, useful for small pieces and precise cut: it can be filled in raw (with grease and dry) and closed with sealing machine for the elaboration of envelopes or ravioli; brush with textured liquids, sprinkle with candies, dry ingredients or sugars or laminate with fats, without the need to intervene in the shape or size. ObltS is of special interest in combination with our range of LyoP (freeze-dried powdered ingredients), for a perfect contribution of color and flavor.

Oblate or Oblat means wafer, naming this product made with potato, lecithin and refined canola vegetable oil. Originally from Japan and popularly used for the prescription of medicines, by wrapping pharmaceutical preparations in powder with it. Since it was discovered by haute cuisine, it has become a widely used ingredient by chefs and pastry chefs.
