OBLATE DISC

ObltD are disc-shaped bases 90 mm in diameter from Oblate: a very thin layer obtained from mixing potato starch with lecithin and refined canola vegetable oil; that does not provide flavor or aroma. It has a natural origin, and it offers a unique cooking potential. Within our Oblate family, ObltD has been designed to make its use as direct and easy as possible: quickly make delicate crunch textures, small bites with countless ingredients for later dehydration, covered with flavored sugar or caramel powder, dehydrated powder, seeds, flavored with alcohol, honey, etc.

Features

Totally neutral in taste and smell. When in contact with water, it hydrates and melts, although when mixed with fats it does not react or soften. With sugar or caramel powder, it resists the moderate heat of the oven up to 190ºC (374ºF). Therefore, it is very common to cover it with caramel and bake or dry it in a dehydrator at 50ºC (122ºF). Great durability and conservation if kept away from direct sunlight and humid places. For its conservation, it is recommended to keep it in airtight containers and rely on the use of dryers (Calc). The texture of the ObltD is unique, giving an incredibly aerial and light result.

Applications

Preparation of savory and sweet crunchy snacks, petit fours, small bites, etc. For its use, you can brush ObltD with textured liquids, sprinkle with candies, dry ingredients or sugars and bake in the oven or melt under the grill and mold to obtain the desired shape. Since it was discovered by haute cuisine, it has become a widely used ingredient by chefs and pastry chefs.
