ICE CREAM STABILIZER “SUGAR FREE”

Stabilizer for ice cream obtained by mixing a selection of emulsifiers, stabilizers, airing agents and polyols, designed for the sugar free market. Ice15 has been optimized to regulate and allow stability and a good aeration to the texture of the ice cream, without providing excessive sweetness and reducing the sugars of the recipe, specifically without the presence of sucrose.

To ensure the correct solubility of all components, it is necessary to heat it to 80ºC (176ºF). So, when blending Ice15  into the liquid or semi-liquid base, the mixture must be brought to that temperature and kept for maduration during 12 hours in refrigeration before freezing it.

Stabilizing mix designed for sugar-free ice cream as an easy way to equilibrate a formula with a very strict need (not incorporating sucrose); getting the best possible results: light, creamy and perfectly balanced products.
