GLUCOSE POWDER 30 DE

Glu30 is a simple sugar (monosacharide), obtained from the drying process of liquid glucose syrup. Atomized glucose is commonly used as a sweetener. Like Dextrose and liquid glucose syrups, it is obtained originally from corn starch.
For its optimal use, apply to the recipes with the rest of the sugars, or when these would be added.

It is one of the most present sweeteners in pastry shops and restaurants, for its comfort of use and benefits. In pastries and cakes recipes, it extends shelf life and confers juiciness and moisture. In ice cream production, it inhibits the formation of ice crystals and enhances the creamy sensation, in sugar work it prevents the recrystallization of sugar, in jams, jelly beans, chocolates and glaze it provides thickening and elastic and flexible texture. Improves extrusion. Due to its hygroscopic capacities (absorbing water and ambient humidity) Glu30 is also a very useful ingredient in doughs and fermentations.

Curiosities

30 DE is the factor that indicates the degree of equivalence to dextrose, which is given to all derivatives of dextrose to establish a gradation of purity. Below 30 DE there is only maltodextrin (starch isolated from dextrose, with an DE value equal to 20).
