It is easily soluble in both acidic and alcoholic media, and even in the presence of fat. We recommend to add it at any temperature in the liquid that you wish to spherify, with the help of a hand blender.
Let hydrate a few minutes before use and remove any air bubbles that may have been added during blending time. (this step is essential, so that the sfera does not float in the Algi solution).
It is usually applied in synergy with Xanthan (Xtan or Spsa) since the density will allow the textured liquid to sink into the bath of Algi and form the Sfera easily.
In reverse spherification, the Sfera will always remain liquid inside, since the Algi in the bath reacts in contact with the Gluc of the Sphere.
It comes in a powder form, neutral in smell and taste.
Applications
Indispensable in reverse spherification (mixed into the liquid to be spherified) and in direct spherification (in the bath, as a substitute for chloride) (in this case, it is advisable to use four times the amount of calcium chloride indicated in the recipe).

E-578 is a salt that is mainly used as an acidity regulator, as a source of calcium or as a stabilizer. It is incorporated into many sports drinks and many children’s growth milks.
