To use as a substitute for brown sugar, replace a small part of the Erytol with molasses or muscovado to have the characteristic color and aroma of it.

Erytol is a polyol which is naturally present in different fruits (pears, peaches, grapes) and in fermentation processes. Erytol has a high tolerance to digestion, is non-glycemic (and therefore suitable for diabetics) and does not promote the development of caries. In addition to its individual use, it is used as a loading agent for stevia, so it has a lot of presence in the food industry. Compared to other polyols, erythritol has the best tolerance in digestion.
