Natural thickener for all types of liquids with a high-water content.
As in the case of Xtan, it resists freezing and in addition to being an excellent thickener, it also serves as a stabilizer of any texture (emulsions, whipping, …) and for suspensions of solids in liquids.
It is especially interesting in ice cream production, as the mixture of xanthan (which favors the overrun) and maltodextrin (Mxt, which provides solids to the ice cream), facilitates the creation of more balanced sorbets.
Available in powder form, with a neutral smell and flavor.
Applications
Thickener of light or dense sauces, cold or hot; spherifications, suspension of solids in liquids and stabilizers of siphon foams, mousses and meringues; Anticrystallizing agent in ice cream, thickener on raw and cold soups, coulis or emulsions such as vinaigrettes.
Curiosities
Mixture made from a combination of xanthan and maltodextrin. This product has been designed to offer all the convenience of a traditional texturization (in terms of use it is like Maizena®: intuitive, direct, easy), together with all the texturization advantages of xanthan (transparency, shine, stabilization, persistence on the palate…).
