DEXTROSE POWDER

Dxt is a monosaccharide (a simple carbohydrate) obtained from starch, -usually from corn starch- and also naturally present in fruit and honey.

It is basically used in confectionery and ice cream production, but it is also present in drinks, chewing gum, jams and industrial pastries and doughs to avoid sugar crystallization in sweet elaborations. It typically reduces the use of sucrose in multiple applications.

Dxt es an indispensable ingredient in the ice cream industry (as it inhibits the formation of ice crystals and allows to obtain better texture with less sweetness) and is also widely used in the production of beers, kombuchas and breads, because it activates yeasts.

Applications

Must have antifreeze product for ice cream; popular in confectionery, where it is especially useful for the preparation of candies (where it reduces the activity of water).

Essential in brewing and fermentation, as it favors the growth of beneficial bacterial colonies.

Curiosities

Dextrose is an alternative name for D-glucose. Chemically, glucose and dextrose are the same ingredient (monosaccharide glucose), but dextrose is 100% monosaccharide glucose. What is called glucose on the market, then, it’s always a mixture of glucose and other polysaccharides, which is why the DE (Dextrose Equivalent grade) has to be specified in all products called Glucose.

Dosage

6 – 15 gr / Kg

It can be used as a substitute for sugar 1:1 (very useful for all the elaborations we have specified before) but it is commonly recommended (as for the rest of polyols and tec sugars) to use as a replacement for maximum 33% of the sugar with no further changes.
