Like Xanthan, XtanC thickens both in cold and hot, resists temperature changes and is indicated in freezing-thawing processes. It is useful for alcohol, acidity and has the same range of action and uses as Xtan.
Presentation in refined powder, with neutral flavor and odor.
Applications
Thickening agent for light or thick sauces, hot or cold; spherifications, suspension of solids in liquids, texturing of cold soups, coulis or emulsions such as vinaigrettes, with the only difference compared to Xtan in the final appearance (the transparency it offers).
Curiosities
When integrating XtanC , as with Xtan, it can be done in two ways: mixing softly with whisk and leaving it to rest for 24 hours to hydrate or mixing with strong agitation.
When aiming for transparent results, removing the air bubbles is even more important. In kitchens, the most common is the second option, adding the xanthan to the liquid with a hand mixer and removing the air in the vacuum machine. Due to the large amount of time invested in this process, and the possible product losses, we recommend the use of Vortex (vacuum magnetic stirrer), in which the texturing with xanthan is done in just 3 minutes and without having to invest time or attention.
Dosage
3 gr / Kg
Mix slowly into a cold liquid, and let it hydrate on its own. You can speed up the process with srong agitation, but it will form air bubbles. Excess dosage results in unpleasant viscous textures.
